The phrase used to describe the filling of a sauce (often in ready meals) which is below 5°C. The sauce will have been rapidly cooled post cook and stored chilled until filling and packing. Can be micro-biologically more sensitive than hot fill, susceptible to Enteros, E coli and Listeria contamination, depending on the GMP and hygiene of the FBO.
