Normally a CCP, in a HACCP plan flow diagram. This describes the coding of the food product and the application of the label to the food product. Coding can often be a CCP from a microbiological point of view in chilled products and labelling can be a CCP from an allergenic point of view, in FBOs that handle more than 1 allergen (therefore there is an allergenic risk of mis-labelling.)
