Listeria is a Vegetative bacteria, relatively heat, cold and chemical resistant. Extremely important in chilled foods. Ten of the best known species of Listeria, alphabetically, are – fleischmannii, L. grayi, L. innocua, L. ivanovii, L. marthii, L. monocytogenes, L. rocourtiae, L. seeligeri, L. weihenstephanensis and L. welshimeri. L monocytogenes is the only pathogenic organism (debate about pathogenicity of L. ivannovii).
