
Enterobacteriaceae – A large family of gram negative bacteria that includes Shigella, Salmonella and E coli. Used in food manufacturing for testing RTE product usually fully cooked and used to swab equipment post hygiene. A great post hygiene contamination indicator and as such can be a more useful test than actually testing for Listeria as it can often be a precursor to Listeria contamination (and is much more available in the plant environment and therefore more likely to appear on a swab.)
