Mould

A type of fungi, important spoilage organism in food or indicator of spoilage. Air plates can be used to monitor airborne mould, which are important in bakeries. In a chilled plant, air plates can be a good indicator of the cleanliness of Evaps. Moulds can form spores and lie dormant in dry ingredients. Moulds are responsible for the production of Mycotoxins.
