A method of monitoring the hygiene practices of Operatives and Food Handlers. Most effective tests are Enteros post handwash (indicator if Operative is washing hands correctly) and Staphylococcus aureus in production (if a carrier of Staph, will indicate whether they have touched their face, nose without washing their hands afterwards.) This bacteria is pathogenic and can transfer to the food product.
