
A room or Chamber where product has cold air blown on to it to chill air freeze the product quickly. This process of cooling is often a as it controls the growth of pathogens, specially spore formers such as B cereus and C perfringens. Blast freezing is the same principle but the product finishes at a frozen temperature, normally for shelf life and quality reasons.
