
The term used in GFSI, usually under the Quality Management System, of the way an FBO handles a crisis. A crisis can occur when there is a heavy breech of food safety or of an issue in the business that can seriously effect food safety, such as the breakdown of the refrigeration in a chilled food processing plant. Crisis Management is invoked and the Crisis Management Team (CMT) is assembled.
