A high care area of the manufacturing plant is the area where materials have been DECONTAMINATED from microbiological contamination, but the risk has not been ELIMINATED. A High Care site usually has a wash facility or a pH control area. In meat, can be a fermented meat facility (i.e. full 6 log reduction has not been achieved.)
