
Internal audits are carried out by a company’s own employees against set standards, policies and procedures. They can often be more detailed than a third party external audit as employees should have better knowledge of their company’s processes, policies and procedures. An internal auditing system is an important HACCP pre-requisite and fundamental requirements in GFSI and in retailers’ own COPs. A system of audits carried out internally can be an indicator to an external auditor of Senior Management commitment to food safety and continual improvement.
