
One of the 14 allergens as classified by the EU. Can be a potent allergen. Relates to mammalian milk, i.e. cow’s milk and goat’s milk. Milk allergy relates to the allergic reaction of the casein protein within milk and to a lesser extent Beta Lactoglobulin. – not be confused with infancy intolerance of the sugar lactose – although an allergy to lactose is known too. Found in all dairy product and can be widespread among a variety of food stuffs, specially processed, convenience foods. Responsible for 10-19% of anaphylaxis cases in the UK (2011.)
