A pathogen is a description of an organism responsible for food borne illness in human beings. Pathogens can be single celled bacteria, protozoa, or a Virus. Pathogens can either cause food borne illness through ingestion of live cells where metabolites include toxins, or through dead cells that have produced toxins contaminating the food product.
