
Designed to produce regular identically sized cheddar cheese blocks, they are bagged ready to then be vacuum sealed. Salted curd chips are drawn by vacuum to fill a vertical tower where with continued vacuum, the curd becomes a fused mass, which is guillotined, ejected as a block and then bagged. Cleanliness is important at this stage to prevent a build up of Enteros.
