
A harmful chemical either man made or occurring naturally, can be produced by bacteria and yeast and moulds, or can be a natural plant constituent. Can also be synthesised from a process, eg heat treatment.
Toxins are regarded as a chemical hazard in HACCP, however, bacterial pathogens secrete toxins too, which make these chemicals a fundamental part of all microbiological hazards in a HACCP system.
